I'll have a go at explaining...

The basic idea is simple: players send their orders in to a
central moderator, who works out what's happened and sends
the results back.

Most PBM/PBeM games run in turns, so everyone's orders are
processed together, simultaneously, and you get your turn
results back at the same time as the other players. Usually,
these results will only apply to your own character or
position. You don't see the whole game like you do in table-
top gaming, but it's possible to contact the other players
between turns so that you can plan together.

There are all sorts of games with a vast range of settings!
The number of players required can vary from half a dozen to
hundreds; some games can be won, others proceed indefinitely;
some concentrate on your game character, others on a game
position; the moderator may work out the results by computer
or by hand; results can be wholly textual, wholly numerical,
or a mixture; some games are easy to learn (if not to win),
others are more complex.
