What would be gained? I scanned through your thoughts on the subject
and couldn't see any thing which is gained other than complexity.

For example, today's Olympia armies can earn so much gold via WORK
that there would be no need to pillage in a food-based situation --
they'd just work and buy food. If you put a cap on how much WORK
income could be made in a province in one turn, that's the same as
putting a cap on food production.

Not having food, though, means you avoid a host of troubles. What
about a unit that starves to death while holding money because the
owner forgot to order them to buy food? So you add automatic food
purchase. What happens to a unit that's not in a place where you can
buy food, but is adjacent to such a place? Starve? Or add automatic
movement? And so on. Abstracting food as money gets rid of all of
this trouble.
