Not in the individual bouts, but probably towards winning the tournament.

Perhaps each character could set a "surrender level", the level of
wounds at which a character surrenders.  If this were on the usual
0-9 scale (well, 1-9, 0 would mean surrendering before you get hit)
it could be in tenths of you total damage taken.  For example,
if set to 6 the character would surrender when the amount of damage
he has taken exceeds 60% of his total.  And, of course, if the character
is knocked unconcious he has effective done so as well.  Then, if an
attack knocks him from blow his surrender level past his "dead level"
in damage, he dies or makes some sort of a Constitution check to aviod dying.
A player who sets his character's surrender levels to 1 will probably never
loose a character, but will also have them surrendering in bouts they could
have easilly won.
