Stock prices are quoted in 8ths of a dollar. What you do is agree on a date and use the closing stock prices for that date. You can just start at the top of the NYSE (or, for us internet techy types, NASDAQ might be better) or pick a particular stock and work down from there. Ignore any 7/8ths or even dollar amounts. The other thing you need to do is decide what order the die roles will be selected in. Generating die roles other than d6 or d8 is trickier, but we're all smart people.
