Irony Games has a halfway decent How-To-PBeM section for
roleplaying games somewhere in the vicinity of
http://www.irony.com/ (that's not the gaming area directly, but
it's the only one I remember for sure).  Ed's got a list of games
with openings there (though he apparently views the Phoenyx as
The Competition and stashes us back on the "cross-genre" page
even though we haven't got a cross-genre game to our name), with
a skewing toward D&D since he follows rec.games.frp.dnd.

If you're interested in PBeM roleplaying in general and not D&D
in particular, the Phoenyx has a batch of games (a couple of
which are fantasy, but not D&D) at http://www2.southwind.net/~phoenyx/.
